Butter chicken — murgh makhani — was born in the tandoor restaurants of the subcontinent and became beloved on both sides of the border, from Delhi to Lahore. The idea is simple and brilliant: tender chicken folded into a sauce of tomatoes, butter and cream, rounded out with warm spices. Done right, it's rich without being heavy, gently spiced rather than hot, and almost impossible to stop eating. Done wrong, it's orange soup. The difference is in the details below.

How we make ours

Our version starts the way everything at the truck starts: with halal chicken and a proper marinade. The chicken cooks through until tender, then simmers in a tomato-butter-cream sauce built on a Lahori-style spice blend — the same family recipes behind the rest of our Pakistani & Indian menu. Because we're a small truck kitchen rather than a hotel buffet, the sauce is made in small batches and never sits under a heat lamp. Every dish we serve is halal, and there's no beef anywhere on the menu — this is chicken, lamb and vegetarian cooking only.

Why it's served over rice at a street food truck

At a sit-down restaurant, butter chicken arrives in a dish with naan on the side. At a takeout-only truck, it needs to work in one box, eaten wherever you happen to be — a bench near Niagara Falls State Park, your hotel room on Rainbow Blvd, or your couch. So we ladle it over seasoned rice, street-food style. The rice soaks up the sauce, the box travels well, and a cold drink comes with it. That's the whole design: restaurant-depth flavour in a format built for the sidewalk.

How to order it right

The move our regulars swear by: Butter Chicken Rice plus a garlic naan ($5.99) for scooping — rice for the meal, naan for the sauce. If you're feeding two, add a samosa ($7.99) to start and finish with gulab jamun ($6.99). Is it spicy? No — warm spices, not hot ones; kids eat it happily. Is it halal? Completely, like everything else we serve. Is it big enough to share? It's a full meal for one hungry person; for two, add a naan and a samosa. Can I get it delivered? Yes, anywhere in the Niagara Falls area — it travels better than almost anything else we make, because the rice keeps the sauce hot.

Beyond butter chicken
