What makes the best shawarma in Niagara Falls? Four things, honestly

Fresh spit-roasted chicken, an overnight marinade, real garlic sauce and a hand-rolled wrap — everything else is detail.

Every shawarma spot claims to be the best. So instead of claiming, let's explain. If you want to find the best shawarma in Niagara Falls — from our truck at 360 Rainbow Blvd or anywhere else — these are the four things that actually decide whether a shawarma is great, and how we handle each one at Lahori Shawarma.

1. The spit: carved fresh, never pre-cut

Shawarma is defined by the vertical spit. Marinated chicken (or lamb) is stacked in layers and rotates slowly against the heat, so the outside caramelizes while the inside stays juicy. The critical moment is the carve: great shawarma is shaved off the spit when you order it, so you get those crisp, charred edges together with tender meat underneath. The shortcut version — carving a pile in advance and holding it in a tray — is how shawarma ends up dry and grey. At our truck, the spit runs all day and every order is carved to order. It takes a couple of minutes longer at the window. It's worth it every single time.

2. The marinade: overnight, not an afterthought

Meat that goes on the spit plain tastes plain, no matter how good the carve is. Our chicken marinates overnight in garlic, lemon and a Lahori-style spice blend before it's ever stacked — the same family approach behind everything on our Pakistani & Indian menu. That long marinade is why the flavour goes all the way through the meat instead of sitting on the surface, and it's why our shawarma tastes noticeably different from a generic shawarma counter. The lamb gets its own spice treatment, deeper and earthier, and roasts on its own spit so neither meat compromises the other.

3. The garlic sauce: the make-or-break condiment

Ask any shawarma obsessive and they'll tell you the sauce is half the experience. A proper garlic sauce is creamy, sharp and strong enough that you taste it in every bite — it cuts the richness of the meat and ties the wrap together. Watery, bottled-tasting sauce is the fastest way to ruin good meat. Ours is made in-house and applied generously, alongside pickles and fresh vegetables that add crunch and acidity. The balance matters too: enough sauce that every bite gets some, not so much that the bread turns soggy before you're back at your hotel on Rainbow Blvd. That's a judgement call a cook only gets right after rolling a few thousand wraps.

4. The wrap: rolled by hand, tight enough to walk with

Finally, construction matters. A shawarma wrap should be rolled by hand, tight and even, so the sauce distributes through the whole thing and nothing falls out on the second bite. As a takeout-only food truck, we take this seriously — your wrap has to survive the walk back toward Niagara Falls State Park or the drive home, and a loose roll fails that test by block two. If wraps aren't your thing, the same fresh-carved meat goes over seasoned rice with salad and house sauce instead.

How to taste-test all four
